"$" character not a choice?
Would like the "$" character to be a choice when customizing long-press.
Any idea why the “$”character isn’t one of the choices in the period key/customize long press? I tend to use it quite a bit. Or am I missing something?

I think you're supposed to be able to have any symbol there you like, that's why there's the "add Symbol" button. But it's disabled for some reason, same as the "add Domain" button. Seems like a bug to me.
Missed it the first time but this worked for me...
Under "period key/customize long press" and below the “Add" heading
Type the character you want Into the "Symbol" box, hit “Add symbol" button to the right of that box.
The input section and "Add symbol" button should be tweeked/accented in some way to make it a bit more obvious.
@Shbarnum $ just wasn't in the preset grid, and the Symbol field next to "Add symbol" is easy to miss (that button stays grey until you type something, which is why it looked broken). In 2.2, the next App Store update, $ € £ ¥ are in the grid and there's a line above the field saying you can type any character there.
